Corn and Egg Soup



Lately, it has been a periodic change of weather - sunny, rainy, sunny, rainy. Mostly, it's the gloomy one. But don't get me wrong. I love the bed weather. You just want to stay indoors, get cozy in your cool bed, or maybe sleep all day long.

But let's make this chilly day extra warm. Why don't we make a homemade soup? Something fast and easy perhaps? What better way to ease that gloomy state than with a warm and hearty soup. Let's cook something out of simple ingredients and just within the budget.

Today, I'll be making a corn and egg soup. Let's get started!




CORN & EGG SOUP

Prep Time: 5 mins.
Cooking Time: 10 mins.

Ingredients:
  • 1 tbsp olive oil
  • 1/2 cup onion leeks (chopped)
  • 2 garlic cloves (minced)
  •  1 1/2 corn kernels
  • 1 tsp ground black pepper
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 2 cups water/chicken stock/corn stock
  • 1 chicken broth cubes (if using water)
  • slurry mixture (2 tsp cornstarch in 1/4 cup water)
  • 1 egg
Directions:
  1. In a pot, put olive oil.  Saute onion, garlic, and corn kernels. Season it with salt, pepper, and thyme. 
  2. Add in the stock and let it simmer for 5 minutes.
  3. Put the slurry mixture and egg. Constantly, stir the soup until thick.
  4. Serve hot.
